Hand-picked from 85% Carey Gully fruit in the Piccadilly Valley (Scanlon Vineyard) and 15% from our Lenswood estate vineyard.
Fermented with 5% whole bunch and the balance destemmed, the wine spent 14 days on skins before pressing and settling prior to racking to French oak hogsheads.
Malolactic fermentation was completed in oak, followed by nine months maturation in French oak prior to bottling.
Only five hogsheads were produced, equating to approximately 2,000 bottles.
